Freeze drying or spray drying: how to make fruit powder

Three drying technologies, three different results. What each one offers and which suits your fruit and the product you want to sell.

Published: October 19, 2026

Drying turns fruit into a stable, lightweight product that is easy to ship. But dryers do not all give the same result: the technology decides whether you get crisp whole fruit, a powder for industry or dried slices.

Freeze drying

The fruit is frozen and the water is removed by sublimation under vacuum, with the condenser at −45 °C or below. Because the product stays at low temperature, it keeps its shape, colour and aroma better. It can make whole or cut fruit, such as freeze-dried blueberries or whole or crushed passion fruit, as well as powder, such as avocado powder.

It is a batch process, slower and with higher energy use per kilo than the other methods, so it is usually reserved for higher-value products.

Spray drying

Juice or pulp is atomised into a stream of hot air with an inlet temperature of 150–200 °C. The droplets dry within seconds and the powder is collected at the base of the tower. It is a continuous, high-capacity process, but it only makes powder and needs a liquid feed.

For sugary fruit, a carrier such as maltodextrin is usually added so the powder does not stick. This is how mango, banana or passion fruit powder is made, for example.

Heat pump drying

It works at 40–75 °C with energy savings and is designed for dried slices, such as mango or banana slices.

Which to choose?

  • Freeze drying for premium snacks and ingredients, where colour, aroma and texture justify the cost.
  • Spray drying for powder in volume, for the beverage and food industry.
  • Heat pump drying for dried fruit slices.

The technologies can be combined in one plant: the same washing and preparation line can feed the spray dryer or the freeze dryer, depending on each season’s product.
